Super Healthy Homemade Muesli for Breakfast

Most of us know by now that eating breakfast fires your metabolism (your fat-burning engines), balances your blood sugar to keep cravings away and keeps your mental energy high. However, what you may not know, is that what you eat is just as important as eating at all.This recipe has become one of my breakfast favourites because you can make it ahead of time (preferably at night) to enjoy the next morning. It's packed full of vitamins and minerals including: vitamins E, D, K, iron, potassium, magnesium, calcium. And it's loaded with good bacteria to keep your belly smiling.
There is a very unique ingredient in this recipe that makes it so joyous – kefir. What exactly is kefir?
Kefir is a fermented dairy product made by adding bacterial cultures to milk which cause the transformation of the milk's sugar into lactic acid. Kefir's taste is unmistakable. It has an effervescent nature that has been labeled as the "champagne effect". It's tart and the texture is thinner than yogurt. Kefir is fast becoming known as a "superfood" because it is bursting with good bacteria that may fortify your immune system. Kefir can now be found not only at farmer's markets and health food stores, but your local grocery store, too. Most grocery stores will carry kefir in their health food section. It's kept in the fridge with the other organic dairy such as milk and yogurt. It comes flavoured as well, my favourite is vanilla.
The key to this recipe is making it at night because it is highly beneficial for the nuts and seeds to soak for at least eight hours to increase the digestibility. Nuts contain enzyme inhibitors and soaking 8-12 hours releases these inhibitors. Be sure that you only soak the amount you require because soaked nuts and seeds tend to grow mould fairly quickly.
Homemade Muesli Recipe after the jump
2 cups of raw organic oats
½ cup pumpkin seeds
½ cup sunflower seeds
½ cup walnuts or almonds
½ cup raisins and/or cranberries
3 cups of pure filtered water
2 tbsp kefir
1 freshly squeezed lemon
Directions
Combine all the dry ingredients into a glass bowl and stir. Add enough water to entirely cover the ingredients. Stir in kefir and lemon juice. Leave out on the counter overnight with a loosely fitting lid. Make sure to put it in the in fridge the next day to ensure freshness. Do not keep more than 2-3 days.
How to Enjoy!
Spoon out desired amount of muesli into bowl. Add desired amount of organic yogurt, a dash of cinnamon (very blood sugar balancing), 1 tbsp of organic maple syrup, 2 tbsp of ground flaxseeds or 1 tbsp flax oil, fresh fruit and enjoy!!
