As I write this I'm dipping some organic corn chips into some cilantro pesto I made yesterday, and holy cow is it delicious. I had a bunch of cilantro in my fridge and nothing to do with it, so inspiration hit and the result is this tasty dip. You could also use it as a marinade, add it to oil and vinegar as a dressing, put it on pasta or use it as a sauce for meat or vegetable main courses.Cilantro has some heavy-metal chelating power, pulling accumulated mercury, lead, arsenic and other heavy metals from the tissues allowing them to be removed from the body. Plus, the garlic hit in this dip will help to kill off the bad guy bacteria (like candida) in the gut allowing the beneficial gut flora to flourish. And when all was said and done, I had it made and was snacking on it in about two minutes flat.

Cilantro Pesto
1 bunch of cilantro, washed well and shaken dry
A handful of organic walnuts
1 clove of garlic
A nice pinch of unrefined sea salt
A couple of glugs of olive oil (I probably used about a quarter cup)
Put all dry ingredients into a food processor and start chopping. Add the oil slowly while the blades are turning until it reaches a pesto-like consistency.

I love Cilantro so much that I put it on almost everything, fresh, or add to some cooked items. I've asked to have it put on pizza in a restaurant and other hot foods like pasta and sauces. I also love a salsa made with cilantro, finely chopped onion and tomatoes, a bit of olive oil and salt and pepper to taste and letting it marinate for a few hours in fridge makes this even better.. I ate this in some Mexican restaurants in LV. Very tasty on chips, etc.
